I am Count David J. Gagnon, D.D., Ph.D., FWCI, the Conde de Sementra de la antiqua Capadocia Del Bizancio, and a respected member of several Royal houses throughout Europe. I manage international, inter-governmental, and humanitarian work around the world. I enjoy advising, lecturing, and teaching, but my favorite pastime is my family, cooking, camping, and fishing. This cookbook is not designed for the 5-star chef that graduated from Culinary Institute of America at Hyde Park, I could learn from him. I designed this cookbook to help those of you that want to learn to cook something new, something different. I want to help the person that claims they don't know how to boil water, or the college student that believes Romain noodles is the only affordable staple in their budget. I've dined in some of the best restaurants in the world. Some were exquisite, some were OK, and some should have been closed. I'm not a professional chef. I am, however, a professional eater! I truly enjoy great foods and I enjoy almost everything. Consequently, cooking has always been a great stress-reliever for me. Cooking for me is always fun, not a chore. I take great pride in the foods I prepare and learned at an early age that spices and herbs are your friends. They can make a bland dish into a masterpiece, and a masterpiece into a disaster with too much of any of them. Every dish in this cookbook was made and photographed by me. After months of being scolded by my wife for not measuring my ingredients, I now measure and write everything down, so I can share these recipes with you. However, I will admit, I still manage to add something new to an existing recipe every time I make it. I call it tweaking the recipe! That's what I want you to do too. Make the recipe and add something new to it. Make it your own! Lastly and most importantly, there are 3 main ingredients that should be in every recipe you make: Fun, Passion, and Pride!
